Several antimicrobial peptides have been derived from casein (Lahov and Regelson, 1996) (see: Caseins). For examples see: casocidin-1, beta-casochemotide-1, Caseinomacropeptide, casecidin, isracidin.
Baum et al (2013) have profiled raw milk for the content of endogenous peptides. Most peptides originate from Alpha-s1-casein, followed by casein-beta, and Alpha-s2-casein. Casein-kappa and whey proteins seem to play only a minor role as peptide precursors. The authors have suggested that many of the nearly 250 identified peptides might be generated by endogenous peptidases
