[alpha-caseins, Beta-caseins, Kappa-caseins]
Caseins constitute a family of evolutionarily related proteins (Ginger and Grigor, 1999; Fujiwara et al, 1997). Casein is the collective term for a number of secreted proteins found in mammalian milk. Caseins are amphiphilic proteins and differ in their amino acid, phosphorus, and carbohydrate content (for overview see: Holt et al, 2013).
Species comparisons show that caseins are among the most rapidly evolving proteins but contain a number of conserved residues distributed along the entire lengths of the proteins. It is thought that these residues function to conserve the 3-dimensional structure of the proteins.
