Also: kappa-casein(139-146). This bioactive peptide with the sequence VESTVATL (Val-Glu-Ser-Thr-Val-Ala-Thr-Leu) is derived from bovine casein-kappa by enzymatic hydrolysis. The peptide shows antimicrobial activity and is active against Gram-positive Listeria innocua and Staphylococcus carnosus and Gram-negative Escherichia coli and Serratia marcescens. (López-Expósito et al, 2006).
