This peptide with the sequence LRLKKYKVPQL (Leu-Arg-Leu-Lys-Lys-Tyr-Lys-Val-Pro-Gln-Leu) is derived from bovine alpha-s1-casein (approved gene symbol: CSN1S1 [casein-alpha-s1]) (McCann et al, 2006). The peptide shows antimicrobial activities and is active against Gram-positive Bacillus subtilis, Listeria innocua, Listeria monocytogenes, and Gram-negative Citrobacter freundii, Enterobacter aerogenes, Escherichia coli, Salmonella enteritidis, Salmonella typhimurium.
