Ovalbumin is one of the major proteins in avian egg white. The protein is a member of the ovalbumin serine protease inhibitor family (ov-serpin) but lacks enzymatic activity. It is being referred to also as SERPINB14 [serpin peptidase inhibitor clade B member 14]. mRNA and genome sequence and organisation have been described by McReynolds et al (1978) and Woo et al (1981).
Pellegrini et al (2004) have reported that cleavage of ovalbumin with trypsin or chymotrypsin yields peptide fragments with antimicrobial activity. Tryptic digestion yields
