Also: lactoglobulin-beta(92-100). This short peptide (VLVLDTDYK) is obtained from bovine beta-lactoglobulin by proteolytic digestion with trypsin. The peptide shows bactericidal activity against Gram-positive bacteria (Staphylococcus aureus, Staphylococcus epidermidis, Staphylococcus lentus, Bacillus subtilis, Micrococcus luteus), suggesting a possible antimicrobial function of beta-lactoglobulin after its partial digestion by endopeptidases of the pancreas (Pellegrini et al, 2001).
