Also: lactoglobulin-beta(78-83). This short peptide (IPAVFK) is obtained from bovine beta-lactoglobulin by proteolytic digestion with trypsin. The peptide shows bactericidal activity against Gram-positive bacteria (Bacillus subtilis, Staphylococcus lentus, Streptococcus zooepidemicus), suggesting a possible antimicrobial function of beta-lactoglobulin after its partial digestion by endopeptidases of the pancreas (Pellegrini et al, 2001).
