This peptide, LGTQYTDAPSFSDIPNPIGSENSEK, is a bioactive fragment of alpha-s1-casein obtained by hydrolysis of bovine sodium caseinate with a partially purified proteinase of Lactobacillus helveticus (Minervini et al, 2003).
